<p>Mix the garlic, ginger, Umami 33, soy sauce, and pepper until combined. Pour over steaks and let sit for 1-4 hours.  Before grilling, bring steaks to room temperature and bring prepare grill for direct heat grilling. Let grill stand at heat for ½ hour to preheat grates so that you can get perfect grill marks.  Lay the steaks on the grill and cook for about 2 minutes. Reserve the marinade. As you turn the steaks, baste each side with the leftover marinade. Turn the steaks 3 or 4 times to create a delicious crust of Umami 33 on the steaks. Cooking time will vary depending on the thickness of the steak, but 3 to 4 rotations will leave you with a medium-rare steak.</p>

<p>In a small bowl, mix the Umami 33 and the soy sauce to make a marinade – adding more of either depending on the size of your Ahi steak. Put the Ahi in the marinade and sit in the refrigerator for 1 hour. When you are ready to cook, heat the oil to smoking in a cast-iron or stainless-steel pan.&nbsp;As the oil is heating, put the sesame seeds on a plate and roll the Ahi steak in the sesame seeds to coat.</p>



<p>When the pan is hot enough, add the Ahi steak to the pan and sear on each side for 2 minutes. Remove the fish from the heat and slice into ½ inch slices. Garnish with chopped green onions and drizzle with Umami 33. Serve over rice, providing dipping bowls of Umami 33 for the diners.</p>

<p><strong>Sear the scallops:</strong>&nbsp; In a stainless steel or cast iron skillet, heat the canola oil over medium-high heat until the point where it starts to shimmer and is almost smoking. Make sure the scallops are patted dry, and season them lightly with salt and pepper. Working in batches, sear the scallops for 2 minutes on each side – they should have a nice golden-brown crust. Remove the scallops from the heat and slice in half lengthwise.</p>



<p><strong>Assemble the </strong><strong>Nigiri</strong><strong>:</strong> Take one of the rice molds and add a dollop of Umami 33 on top. Put a scallop on top of the rice and top with another dollop of Umami 33. Top with a pinch of the crab meat and a slice of red Jalapeno, and garnish with a pinch of Panko on top.</p>

<p>Heat grill to high. Place the salmon, skin side down, on the grill. Brush the fish liberally with Umami 33. Cook the fish with the cover closed until golden brown and the fish is cooked – about 7-8 minutes depending on the thickness of the fish.  When removing from the grill, slide spatula between fish and skin. The fish should lift easily away from the skin, leaving you with a filet that can be easily sliced for serving.</p>
